Who doesn’t love soft, warm, and delicious homemade banana bread? But, when you’re trying to avoid or limit added sugar, maybe you feel like you have to do without?? Nope!
Inspired by Tosca Reno’s Eat Clean Breakfast Date Bread, but modified to cut out all sugar and eggs – so it’s better for you, and cruelty-free!
Healthy Naturally Sweet Sugar-Free Vegan Banana Bread
Get ready:
Pre-heat oven to 350 degrees.
Line a loaf pan with non-stick spray or use a brush to spread vegetable cooking oil over the bottom and sides.
Mix 2 tbsp of ground flax seed meal with 6 tbsp of water, let set in the fridge for 5 minutes while you prepare the below.
Mix it up!
Mash 3 ripe bananas in a medium size bowl.
Add 1/2 cup unsweetened applesauce (one of those travel applesauce cups!)
Add 1 tsp of vanilla extract.
Chop 1 cup of pitted dates, and put aside.
Mix in flax ‘eggs’ to banana mixture, set aside.
In a separate medium bowl, combine 1 cup whole wheat flour with 1/2 ground oats.
Add 1 tsp baking soda and 1/2 tsp baking powder to flour mix.
Mix in 1 tsp cinnamon and pinch of nutmeg to flour mixture.
Add flour mixture to banana mixture.
Fold in chopped dates.
Pour into pan and spread with spatula if needed.
Bake for 40-45 minutes.
Check it’s done when a toothpick inserted in the middle comes out clean.
Serve warm with vegan butter, or just as is! Enjoy
